Breakfast Farro with Cherries, Pistachios, and Honey Whipped Ricotta

Farro is a nutritious, high-protein, high-fiber wheat type similar to barley. Nutty and slightly chewy, this whole grain pairs perfectly with fresh ripe cherries and roasted pistachios. Ricotta is whipped with honey and cinnamon for warmth, and a touch of Greek yogurt for tang, and spooned over the farro for a breakfast that feels more like a treat than a simple meal.

Ingredients:

  • 1 c. farro

  • 1/2 c. fresh ricotta cheese

  • 3 T Greek yogurt

  • 2 T honey

  • 1/4 t. cinnamon

  • 1/4 c. cherries (pitted and halved)

  • 1/4 c. pistachios (shelled)

Instructions:

  1. Cook the farro in a pot of boiling, salted water according to package directions, or about 20 minutes. It should be al dente. Drain and set aside.

  2. While the farro is cooking, add the ricotta cheese, Greek yogurt, honey, and cinnamon in a small bowl. Whisk by hand or use a blender to whip until smooth.

  3. Divide the farro between four bowls. Top each bowl with cherries, pistachios, and a large spoonful of ricotta and yogurt mixture. Serve immediately.
