Quick and Easy Spaghetti Aglio e Olio for One

Ingredients:

● 1/4 package (3 ounces) of spaghetti

● 2 cloves of garlic, thinly sliced

● 2 Tablespoons extra virgin olive oil

● 1/8 teaspoon red pepper flakes (adjust to taste)

● Salt, to taste

● Freshly ground black pepper, to taste

● Chopped fresh parsley, for garnish (optional)

● Grated Parmesan cheese, for serving (optional)

Instructions:

1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the spaghetti.

2. Prepare the Garlic Oil: While the spaghetti is cooking heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes to the skillet. Cook, stirring frequently, until the garlic is golden brown and fragrant, about 1-2 minutes. Be careful not to let the garlic burn.

3. Combine Pasta and Garlic Oil: Add the cooked spaghetti to the skillet with the garlicoil. Toss well to coat the spaghetti evenly with the oil and garlic. If the pasta seems dry, add a splash of the reserved pasta cooking water to loosen it up. Season with salt and pepper to taste.

4. Garnish and Serve: Transfer the spaghetti aglio e olio to a bowl. Top with grated Parmesan cheese and chopped fresh parsley if you have some. Grab a fork, pat yourself on the back, and enjoy!
