Tuna and White Bean Salad

Tuna and White Bean Salad is a classic Tuscan dish that melds cannellini beans, canned tuna fish, capers, shallots, and arugula for a protein-packed, light summertime meal.

I love to serve this salad as a weekend lunch or a light dinner with freshly baked bread that's been toasted. Generally speaking, I always have a can of beans and tuna on hand, so this dish is perfect for a pinch and only takes a few minutes to prepare.

Ingredients:

  • 1 - 15.5 oz. can of great northern or cannellini beans

  • 1 - 5 oz. can of tuna

  • 1 shallot (thinly sliced)

  • 2 t. capers (rinsed and drained)

  • handful of fresh arugula

  • 2 T. extra virgin olive oil

  • 1/2 t. salt

  • 1/4 t. pepper

  • squeeze of fresh lemon

Instructions:

  1. Combine the beans, shallot, capers, olive oil, salt, and pepper in a bowl and stir. Add the tuna, flaking it, if the chunks are too big. Stir and taste for salt and pepper.

  2. Add arugula and a squeeze of fresh lemon and stir.

  3. Serve with crackers, crusty bread, or by itself.
